Crabmeat and Mushrooms in Wine Sauce |
Ingredients: 1 lb. fresh crabmeat 1 lb. fresh mushrooms (sliced) or One large can of mushrooms (stems and pieces) 2 tablespoons of butter (to sauté mushrooms) 2 tablespoons of butter 2 tablespoons of flour 1/2 cup of milk 1/2 cup of white wine 1/2 teaspoon of dry mustard 1/4 teaspoon of dry tarragon 3/4 cup of breadcrumbs Salt, pepper and hot sauce to taste... |
Directions (serves 4): 1. Pull crabmeat apart and remove stiff membranes. 2. Sautee mushrooms in butter. 3. Make a cream sauce blending melted butter, flour and milk, wine, mustard, tarragon, salt, pepper and hot sauce. *** 4. Cook 2 or 3 minutes then add crab meat and mushrooms. 5. Place in Casserole; sprinkle top with bread crumbs and dot with butter. 6. Bake at 350 degrees for 30 minutes uncovered. 7. Cover before serving *** you can substitute the sauce in step 3 with cream of mushroom soup in which case you add the wine, mustard, tarragon, pepper and hot sauce. ENJOY!!! |
